Crunchy Topped Cod

The first time I made this recipe, I left it on the side to cool and my roommate's cat, Maggy demolished half of it. She loved it, I loved it and so will you. Make sure you get that golden colour on top to ensure it’s nice and crunchy




Ingredients


  • 2 Pieces of Cod Fillet

  • 2 Large Tomatoes

  • 25g Wholemeal Breadcrumbs (just blend bread in a blender)

  • 2 Tbsp of Chopped Fresh Parsley

  • Finely Grated Zest and Juice of ½ a lemon

  • 1 Tsp of Olive Oil

  • Salt and Pepper



Directions


  1. Preheat the oven to 200C

  2. Put the cod in a wide ovenproof dish

  3. Slice and arrange the tomatoes on top

  4. In a bowl mix together the breadcrumbs, parsley, lemon zest and juice and oil. Season with salt and pepper

  5. Spoon the crumb mixture evenly over the fish, then bake in the oven for 15-20 minutes
