Mini Omelettes

Out of all the recipes, these were probably the easiest to make. I used spinach, tomato and salsa, but mix it up! I’ve used pepperoni before, ham and chicken. Have fun with it!


  • 3 Eggs

  • Small Handful of Spinach

  • 1 Tsp of Basil

  • 1 Small Tomato

  • 1 Tbsp of Olive Oil


  1. Preheat the oven to 180C and lightly coat a muffin tray with olive oil to avoid sticking

  2. Whisk together the egg

  3. Chop up the spinach and tomatoes

  4. Add the eggs to 3 different muffin cups. The add the spinach and tomatoes in each cup

  5. Bake for 15-18 minutes

  6. Add salsa and sweet chilli sauce
