Turkey Pitas with Mint Yogurt
These make such good packed lunch ideas when you're at work or on-the-go. Prep them up on a Sunday afternoon and you've got a high protein lunch for half the week!
1 Garlic Clove
1.5 Tbsp of Fresh Mint
200ml of low-fat Natural Yogurt
200g of Minced Turkey
2 Tbsp of Feta Cheese, crumbled
2 Pita Bread Loaves, cut in half
1 Tomato Sliced
1/2 Red Onion
Combine garlic and mint in a small bowl and mash. Add the yogurt, mix and put aside.
Combine turkey and feta cheese in a mixing bowl.
Form 8 patties and sprinkle with salt and pepper
Fry for 5-10 minutes per side or until turkey is cooked through
Serve in a pita bread with tomatoes, diced onions and yogurt
